We are excited to announce our new Executive Chef, Josh Plata, from Pittsburgh, Pennsylvania. Josh moved to Rio Rancho as a young boy and instantly fell in love with the culture and cuisine of New Mexico. When he was younger, Josh was always willing to try new things and quickly learned that he felt right at home in the kitchen with his mother and grandmother.

He began his career at a local Italian restaurant in Rio Rancho as a dish washer and within six months became Jr. Sous Chef. Since then, Chef Josh has worked with some of the best mentoring chefs in Rio Rancho and surrounding areas; who he credits for fueling his passion for the culinary arts and love for a variety of foods. Now, with over 20+ years of professional kitchen experience under his belt, Chef Josh has come to Sandiago’s Grill at the Tram. With his idea of a simple, yet creative cuisine, and his take on classic dishes from both Pennsylvania and New Mexico, he will have something new to try each time you come in.
